This quinoa salad is going to taste different from all the quinoa salads that you might have had in the past! First of all everything in this salad is good for you, but most importantly this tastes fantastically delicious! It is gluten free, vegan, healthy and very flavorful. The carrots bring so much freshness, the shredded almonds add just the right amount of crunch and the resins add notes of sweetness making this salad spectacular. Ingredients
1/2 cup quinoa, cooked
3 large carrots, shredded
½ mango, cut into ¼ inch cubs (optional)
2 tablespoons parsley, shopped
3 green onions, chopped
¼ cup almonds, shredded
¼ cup resins
Juice of 1 lemon
1 teaspoon honey
3 tablespoons extra virgin olive oil
1 teaspoon Himalayan Pink salt
¼ teaspoon cayenne pepper
½ teaspoon sweet paprika
Directions
In a large mixing bowl place the cooked quinoa. Add the shredded carrots, mango, parsley, green onions, shredded almonds, and resins. Toss to combine.
In a separate bowl whisk together the lemon juice, the honey, olive oil, salt, cayenne pepper, and paprika. Pour the dressing over the salad mixture and toss to coat. Enjoy!
