I love Ina Garten as much as I love healthy cooking! She has this oven baked omelette recipe that I wanted to try with a more healthy finish.

Ingredients
1 cup of cauliflower, chopped
1 tablespoon olive oil
5 extra large eggs
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
3 green onions, finely minced
4 ounces fresh mozzarella cheese, cut into ½ inch cubes
1 teaspoon Himalayan pink salt
½ teaspoon freshly ground black pepper
A pinch of red pepper flakes (optional)
Directions
Preheat the oven to 350 degrees F.
In a small pan over a medium high heat cook the cauliflower in 1 tablespoon of olive oil. Cook the cauliflower for 5 minutes.
Meanwhile, in a medium bowl, beat the eggs, dill, parsley, green onions, cheese, salt, black pepper, and red pepper flakes with a fork. Do not overbeat. Pour the entire egg mixture over the cauliflower. Place the pan in the oven for 15-20 minutes, until the omelet puffs and the eggs are almost cooked in the center. Serve hot directly from the pan with a freshly squeezed orange juice and enjoy!
