Ingredients
1 ½ lb raw shrimp, peeled and deveined
½ medium sweet potato, shredded
¼ cup cornmeal
½ yellow onion, finely chopped
1 clove garlic, minced
¼ cup fresh parsley, minced
Juice of 1 lemon
½ teaspoon Himalayan pink salt
½ teaspoon celery salt
½ teaspoon black pepper
½ teaspoon paprika
¼ teaspoon cayenne pepper
3 tablespoons light olive oil or high heat cooking oil of choice
Directions
Pat dry shrimp with paper towels then dice into pea-sized pieces. Transfer chopped shrimp to a large mixing bowl. Add the shredded sweet potato, cornmeal, onion, garlic, parsley, lemon juice, Himalayan pink salt, celery salt, black pepper, paprika and cayenne pepper.
Heat a large non -stick pan over medium heat and add 1-tablespoon oil. Add a level ice cream scoop at a time and flatten out the tops of your patties so they are about ½ inch thick. Sauté for about 3 minutes on each side or until golden on the edges and cooked through.
