Ingredients
1 ½ cup cottage cheese
2 eggs
¼ low fat sour cream
¼ cup vegetable oil, I use avocado oil
¾ cup pure maple syrup
1 teaspoon vanilla extract
1 cup all purpose unbleached flour
1 cup whole wheat flour
1 teaspoon baking soda
½ teaspoon baking powder
Pinch of sea salt
2 tablespoons of coconut flakes to sprinkle on top
Directions
Preheat the oven to 400 degrees F . Line a baking sheet with parchment paper.
In a large mixing bowl combine the cottage cheese, eggs, sour cream, vegetable oil, maple syrup, vanilla extract.
Place a sieve over the bowl with the wet ingredients and sift together the all-purpose flour, whole wheat flour, baking soda, baking powder, and a pinch of salt. Fold everything together with a spatula.
Use a small ice cream scoop to spoon the batter onto a prepared baking sheet.
Bake the cookies in 400 degrees F preheated oven for 15-20 minutes or until the edges are lightly golden. Enjoy them warm or let cool completely!
