Ingredients
2 lb boneless turkey breast
For the rub
2 cloves garlic, minced
1 tablespoon fresh rosemary
1 tablespoon fresh thyme
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
2 tbsp olive oil
juice of half a lemon
For the glaze
1 tablespoon lemon zest
1/3 cup of honey
1 teaspoon Dijon mustered
1 tablespoon apple cider vinegar
juice of half a lemon
Directions
Preheat the oven to 325 degrees F.
In a small mixing bowl mix together the garlic, rosemary, thyme, sea salt, black pepper, paprika, olive oil and lemon juice. Wisk together until well combined.
Apply the rub under the skin and all over the turkey breast. Gently pull together the meat and tie with a kitchen twine. Place the turkey breast in a roasting pan and roast for 1 –1,5 hours or until the internal temperature reaches 165° F.
While the turkey breast is cooking, make the glaze. In a small mixing bowl combine the lemon zest, honey, Dijon mustard, apple cider vinegar, lemon juice. Whisk well and brush the turkey breast every 30 minutes while it’s cooking. When the turkey is done, let it rest for 15 minutes covered with aluminum foil. Slice into half-inch slices and serve warm or cold! Enjoy!
