Zucchini and Quinoa Baked Fritters


I came up with this recipe to use up all my summer zucchini from my garden! These patties are healthy, delicious and so easy to make! Also, they are perfect for kids’ healthy after school snack. Your kids won’t even know they are eating zucchini!

Ingredients

4 zucchinis, grated
½ cup cooked quinoa (equals to 1/4 cup uncooked quinoa)
¼ cup fresh dill, chopped
¼ cup fresh parsley, chopped
½ yellow onion, grated
3 garlic cloves, minced
¼ cup corn meal
1 teaspoon Himalayan pink salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
¼ teaspoon cayenne (optional)
2 tablespoons olive oil

Directions

Preheat the oven to 375 degree F. Line a baking sheet with parchment paper.

With the palm of your hands squeeze as much liquid as possible out of the grated zucchini. Place the zucchini in a large mixing bowl and add the cooked quinoa, onion, dill, parsley, garlic and mix to combine. Add the corn meal, salt, black pepper, paprika, cayenne and mix until all combined.

Using a one-inch ice cream scooper scoop the mixture onto the baking sheet. With your fingers press the tops gently to form patties. Cook for 12 minutes. Let cool and enjoy!
