If you love shrimp and want to try something new with your favorite sea food, these shrimp cakes are for YOU! They are juicy, tender and so flavorful. These shrimp patties always disappear fast in my house! Not to mention how easy it is to make them!

Yields: 14 patties
1 ½ lb raw shrimp, peeled and deveined
½ medium sweet potato, shredded
¼ cup cornmeal
½ yellow onion, finely chopped
1 clove garlic, minced
¼ cup fresh parsley, minced
Juice of 1 lemon
½ teaspoon Himalayan pink salt
½ teaspoon celery salt
½ teaspoon black pepper
½ teaspoon paprika
¼ teaspoon cayenne pepper
3 tablespoons light olive oil or high heat cooking oil of choice
Pat dry shrimp with paper towels then dice into pea-sized pieces. Transfer chopped shrimp to a large mixing bowl. Add the shredded sweet potato, cornmeal, onion, garlic, parsley, lemon juice, Himalayan pink salt, celery salt, black pepper, paprika and cayenne pepper.
Heat a large non -stick pan over medium heat and add 1-tablespoon oil. Add a level ice cream scoop at a time and flatten out the tops of your patties so they are about ½ inch thick. Sauté for about 3 minutes on each side or until golden on the edges and cooked through.
