Steak Fajitas


These delicious steak fajitas are fast, flavorful and spicy but not too hot! You have to make these tonight for dinner! Enjoy!

Ingredients

For the seasoning mix
1 teaspoon Himalayan sea salt
½ teaspoon freshly ground black pepper
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon fresh garlic finely minced
½ teaspoon dried oregano
½ teaspoon red pepper flakes
For the Fajitas
3 large (green, red, or yellow) bell peppers cut into stripes
1 large yellow onion, thinly sliced
2 lb sirloin steak, cut into thin stripes
2 tablespoons vegetable oil, or light olive oil

Directions

In a small bowl mix together the seasoning ingredients.

Place the sliced vegetables in a large bowl. Sprinkle with half the seasoning mix and toss gently.

Place the steak slices in a medium bowl and sprinkle with the remaining seasoning mix. Use your hands to rub the spices into the meat.

Heat the oil in a large deep skillet over medium high heat and add all the veggies. Cook until just tender, stirring occasionally. Remove the vegetables onto a plate.

Add the steak slices to the same skillet. Stir-fry just until no longer raw, 2-3 minutes. Do not overcook.

Return the vegetables to the skillet. Stir-fry everything together for another minute, just until heated through.

Spoon the fajitas into warm tortillas with you favorite salsa such as corn and tomato salsa, squeeze some lime juice and enjoy!
