Baked Red Lentil and Quinoa Fritters

 

Who said fritters have to be greasy fat filled balls you end up regretting after having a few? I believe in enjoying all types of meals and not feeling guilty afterwards. All you have to do is remember your healthy cooking habits and any meal can become healthy

Ingredients

For the patties
1 cup red lentil
2 cups cold water
1 and ¼ cups quinoa
2 and ½ cups cold water
1/3 cup corn meal
¼ cup fresh parsley, finely chopped
Juice of 1 lemon
1 teaspoon Himalayan pink salt
2 teaspoons turmeric
1 teaspoon cumin
¼ teaspoon cinnamon
¼ teaspoon cayenne pepper
½ teaspoon freshly ground black pepper
2 tablespoons olive oil
For the yogurt sauce
1 cup non fat Greek yogurt
2 tablespoons fresh dill, finely chopped
2 tablespoons fresh mint, finely chopped
2 garlic cloves, minced

Directions

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
To cook the red lentil
Rinse 1 cup of red lentil, put it into a saucepan, cover with 2 cup of cold water. Over a medium heat bring it up to a boil, lower the heat to a simmer, put the lid on and let it simmer for 15-20 minutes. Let it cool completely.
To cook the quinoa
Rinse 1 and ¼ cups of quinoa until the water runs clear. Place the quinoa into a saucepan cover with 2 and ½ cups of cold water. Bring it up to a boil, lower the heat to a simmer, put the lid on and let it simmer for 10 -12 minutes. Turn off the heat and let it stay covered for another 5 minutes. Open the lid and let it cool completely.
Transfer the cooked red lentil and the quinoa into a large mixing bowl. Add the corn meal, parsley, salt, turmeric, cumin, cinnamon, cayenne pepper, freshly ground black pepper, olive oil. Mix well to combine. Use an ice cream scooper to equally size the fritters and form ½ inch thick patties with your hands.
Bake in the oven on one side for 10 minutes. Flip on the other side and bake for another 10 minutes.
Meanwhile make the yogurt sauce. In a small mixing bowl mix together all the ingredients for the yogurts sauce (yogurt, mint, dill, and garlic)
When the patties come out of the oven. Top them with the yogurt sauce. Serve with lemon wedges and enjoy!
