Chicken Quinoa Soup


This soup is healthy, satisfying and absolutely delicious. This is my go to comfort soup at the end of a busy day! It takes 30 minutes from start to finish and tastes even better the next day! I make this soup whenever I want a bowl of goodness to worm me up and give me some comport. Even the cooking process is satisfying and comforting!

Ingredients

2 tablespoons olive oil
3 boneless, skinless chicken thighs cut into bite size peaces
1 small yellow onion
2 garlic cloves, minced
2 large carrots, diced
2 celery stalks, diced
1 ½ teaspoon Himalayan pink salt
½ teaspoon freshly ground black pepper
6 cups water or low sodium homemade chicken stock
½ cup quinoa, rinsed
½ cup frozen peas
1 tablespoon fresh dill, for garnish
A splash of lemon juice for serving (optional)

Directions

In a large pot over a medium heat cook the chicken peaces in olive oil until lightly browned. Take out the chicken and set aside. Note that chicken is not fully cooked at this point.

In the same oil cook the onion, garlic, carrots, celery until translucent. Add salt and pepper. Pour the water or chicken stock over the vegetables and bring to a boil. Add back the chicken thighs and let it simmer for 10 minutes.

After the chicken has been cooking for 10 minutes add the rinsed quinoa and cook for another 10 minutes. Then add the frozen peas fresh dill and turn off the heat. Serve with a splash of freshly squeezed lemon juice and whole-wheat toast and enjoy!
