Granola Bars

Ingredients

1 ½ dates, pitted
½ cup almonds, chopped
½ cup walnuts, chopped
7 Brazilian nuts, chopped
1 cup rolled oats
¼ cup pumpkin seeds
1 tablespoon flax seeds
1 tablespoon chia seeds
½ cup cashews
¼ cup pure maple syrup
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon pure vanilla extract or vanilla powder
1 tablespoon water, if needed

Directions

Preheat the oven to 325 degrees F. Line an 8 by 10 baking dish with parchment paper.
Soak the dates in hot water and set aside for 10 minutes. Meanwhile toss the almonds, walnuts, Brazilian nuts, and oats on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture into a large mixing bowl.
In a blender or a food processor add the flaxseeds, chia seeds, cashews, maple syrup, salt, cinnamon, vanilla and dates that have been soaked and drained. Blend well. If needed add 1 tablespoon of water. Should be a thick sticky mixture.
Pour the sticky mixture into the mixing bowl with the toasted nuts and oats. Mix well to incorporate everything. Pour the mixture into the prepared pan and lightly press evenly into the pan.
Let it stay in the refrigerator for at least 4 hours preferably overnight. Cut into 2 inch squares and enjoy!
