Greek Inspired Pasta

 

Can pasta be healthy? Absolutely yes! Like I always say, any meal can be made healthy by you. I believe that if you use the right ingredients and cook them in the right way to bring out all of their natural flavors not only can you make your favorite meals healthy but also delicious.

Ingredients

2 tablespoons olive oil
2 boneless skinless chicken breasts
3 garlic cloves, minced
2 cups cherry tomatoes, cut in halves
1 medium zucchini
½ lb whole wheat pasta of your choice, cooked according to the package directions
1 tablespoon lemon zest
1 tablespoon- lemon juice
¾ teaspoon salt, divided
¾ teaspoon black pepper, divided
1/8 teaspoon crashed red pepper flakes
½ teaspoon oregano
4 ounces low fat cream cheese
3 ounces feta cheese, cut in ½ inch cubes
2 tbsp kalamata olives, pitted
1 tbsp fresh parsley, finely chopped
1 tbsp fresh dill, finely chopped

Directions

In a large pan heat the olive oil and cook the chicken breasts for 6-8 minutes on each side. Season the chicken with ¼ teaspoon of Himalayan pink salt and ¼ teaspoon of freshly ground black pepper. Take the chicken out and set on a plate to rest.
In the same pan without adding more oil add the minced garlic, tomatoes, zucchini, cream cheese and the rest of the salt, peppers, oregano, lemon zest, lemon juice and cook for 1 minute. Add the pasta and toss to combine. Turn off the heat and add the feta cheese, kalamata olives, parsley and dill. Serve hot and enjoy!
