There is only one thing that can bit a glass of cold milk with a chocolate chunk cookie, and that is a HEALTHY and DELICIOUS chocolate chip cookie and a glass of cold milk in the middle of an exhausting day. I have tried this recipe many times so my gluten free and 100 % vegan cookies turn out healthy yet irresistibly delicious!!!

Yields: 12 -16 cookies
2 ¼ cups gluten free oat flour (grind 2 ½ cups of gluten free oats to make the flour)
½ cup gluten free oats
½ teaspoon baking powder
½ teaspoon baking soda
1/8 teaspoon Himalayan Pink salt
Flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water, mix together and set aside for 10 minutes)
¼ cup melted coconut oil
½ cup pure maple syrup
1 teaspoon pure vanilla extract
½ cup gluten free dark chocolate chunks
Preheat the over to 375 degree F. Line a baking sheet with parchment paper.
In a large mixing bowl mix together the oat flour, oats, baking powder, baking soda, salt.
In a separate bowl mix together the flax eggs, coconut oil, maple syrup, vanilla extract.
Add the wet ingredients into the dry mixture and stir until combined. Fold in the chocolate chunks. Scoop the batter onto a baking sheet and bake for 10 minutes. Transfer the cookies onto a cooling rack. Serve with your favorite beverage and enjoy!
