Baked Avocado Eggs

Ingredients

1 ripe avocado
2 eggs
Salt
Pepper
Green onions and parsley for garnish

Directions

Preheat the over to 400 degree F.
Slice the avocado in half and remove the pits. Place the avocado halves on the baking sheet and scoop out some of the flesh to make a bigger hole for the eggs.
Crack one egg into each hole and season with salt and pepper to taste.
Bake in the preheated oven for 10-15 minutes until the yolks are at desired consistency.
Sprinkle with fresh herbs and enjoy!
