Brownie Muffin

 

Vegan, sugar free, and flour free brownie muffin recipe! Yes it is possible!

Ingredients

1 ripe avocado
1 ripe banana
½ cup almond butter
½ cup pure maple syrup
½ teaspoon vanilla extract or vanilla powder
¼ cup plus 2 tablespoons unsweetened coco powder
½ teaspoon baking soda
½ teaspoon baking powder
1/8 teaspoon salt

Directions

Preheat the oven to 350 degrees F. Line muffin tins with paper liners.
Using a food processor or a hand blender cream together the avocado and banana (or you can use a fork or a potato masher), add the almond butter, maple syrup and mix well.
Place a sieve over the bowl with the wet mixture and sift together the cocoa powder, baking soda, baking powder, salt and vanilla powder (if using vanilla extract add to the wet ingredients). Fold gently to combine everything together.
Use an ice cream scooper to scoop the batter into a prepared muffin tins. Bake at 350 degrees F for 25 minutes. When done take the muffins out of the muffin tins, place onto a cooling rack and let it cool completely. Serve with you favorite milk and enjoy!
