This pudding tastes beyond delicious everyone! Yes! It’s made of avocado, and has no dairy or sugar in it! I used dates as a healthy sweetener and a teaspoon of maple syrup to taste. I used raspberries to top my pudding but you can use strawberries, blueberries and even chucks of mango or peaches.
Total: 30 minutes
Prep: 5 min
Refrigerate: 25 min
Yields: 2 servings
1 ripe avocado
3 tablespoons unsweetened cocoa powder
6-8 dates, pitted and soaked in hot water for 5 minutes
1 teaspoon pure maple syrup (optional)
½ teaspoon pure vanilla extract
¼ -1/2 cup cold water if needed
1 tablespoon Chia seeds
1 cup fresh raspberries
Take the flesh out of the avocado and place in a blender. Add the cocoa powder, dates, maple syrup, vanilla extract and blend until smooth. Gradually add as much water as needed to achieve pudding like consistency. Place in refrigerator for 25 minutes. To serve, pour into glass jars, top with fresh raspberries and sprinkle Chia seeds. Enjoy!
